Thai-inspired chicken and pineapple curry fried rice for a flavorful and fast meal.
Ingredients:
  • 3 cups water
  • 1.5 cups uncooked white rice
  • 2 tablespoons Asian fish sauce
  • 2 tablespoons pineapple juice
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1 pound boneless chicken meat, cubed
  • 1 medium onion, sliced
  • 1 (20 ounce) can pineapple chunks, drained
Instructions:
  • In a saucepan, bring water and rice to a boil over high heat. Lower the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed. Set the rice aside.
  • Combine the fish sauce, pineapple juice, and curry powder in a small bowl and whisk until well blended.
  • Heat oil in a large skillet or wok over medium-high heat until shimmering. Sauté chicken and onion until chicken is cooked through and onions are translucent, about 5 minutes.
  • Combine the cooked rice, juicy pineapple chunks, and fragrant curry mixture. Stir and cook until the rice is heated through, for about 5 to 10 minutes.
