30-Minute Cheesy Broccoli Pasta Bake: Quick, satisfying vegetarian dinner.
Ingredients:
  • Melted butter, to brush
  • 20g breadcrumbs
  • 25g walnut
  • 20g butter, melted, extra
  • 40g parmesan
  • 300g fusilli pasta
  • 1 large broccoli, separated into small florets (about 280g)
  • 240g tasty cheese
  • 250g ricotta
Instructions:
  • Preheat the grill with the rack about 12cm from the heat source. Brush the inside of a 7-cup (1.75L) baking dish with butter. In a small bowl, combine breadcrumbs, walnuts, extra butter, and half of the parmesan.
  • Boil the pasta in a large saucepan as per package instructions until al dente. Add the broccoli for the final 2 minutes of cooking. Drain the pasta mix, saving 2/3 cup (160ml) of the cooking liquid.
  • Add the cheddar and remaining parmesan into the pan with the pasta mixture, stirring until the cheese melts. In a medium bowl, whisk 1/3 cup (80ml) of the reserved cooking liquid with the ricotta. Combine the ricotta mixture with the pasta in the pan, stirring until the sauce is creamy. Gradually add more cooking liquid to adjust the sauce consistency if needed.
  • Spread the pasta mixture in the baking dish and generously top with the breadcrumb mixture. Grill for 2-3 mins until golden brown. Serve hot.
