Curtis Stone's BBQ lamb burgers with charred onion and capsicum

Make Curtis Stone's quick and tasty lamb burgers with charred onions and peppers for a satisfying family dinner in just 30 minutes.
Ingredients:
  • 500g Lamb Mince
  • 18.20 gm olive oil, divided
  • 1 small brown onion, cut crossways into 1cm rings
  • 1 small green capsicum, cut crossways into 1cm rings, seeded
  • 4 Hamburger Rolls, split
  • 100g mayonnaise
  • 17.70 gm Dijon Mustard
  • 160g cabbage
Instructions:
  • Preheat your grill to high heat. Divide the lamb into 4 portions and shape each into a 1cm-thick patty. Brush with ½ tablespoon of oil and season with salt and pepper on both sides. Grill for 1 1/2 minutes on each side or until fully cooked. Place on a plate and let it rest for 5 minutes.
  • Toss onion and capsicum with the remaining 1/2 tablespoon of oil until coated. Season with salt and pepper. Cook until charred and softened, turning occasionally, for 8-10 minutes. Toast rolls, cut-side down, for 30 seconds until golden.
  • Whisk together mayonnaise and mustard in a small bowl, then season with salt and pepper. Spread this delicious mixture over the rolls. Layer the roll bases with cabbage, patties, onions, and capsicum, then cover them with the roll tops.
