Whip up Curtis Stone's quick and flavorful crispy pork stir-fry with baby broccoli and spring onion in just 20 minutes!
Ingredients:
  • 36.80 gm vegetable oil, divided
  • 1 bunch baby broccoli, florets separated, stems thinly sliced
  • 1 garlic clove, finely chopped
  • 3 tsp finely chopped peeled ginger
  • 2 spring onions, white and green parts separated and thinly sliced
  • 500g Pork 3 Star Mince Regular
  • 60ml pearls
  • 2.50 gm Cornflour
  • 4.50 gm White Sugar
  • 400g white rice
Instructions:
  • In a hot large heavy frying pan, add 1 tablespoon of oil. Once the oil is smoking, cook baby broccoli, tossing occasionally, for 2 minutes or until brown in spots and crisp-tender. Transfer the cooked broccoli to a plate.
  • Place pan back on high heat and drizzle in the remaining 1 tablespoon of oil. Once the oil is sizzling, toss in garlic, ginger, and the white parts of the spring onions. Stir for about 30 seconds or until aromatic. Add the pork and cook while breaking it up with a spoon for 3 minutes or until fully cooked. Spread the pork evenly in the pan and cook without stirring for 3 minutes or until the underside is crispy.
  • Whisk soy sauce, cornflour, white sugar, and 1/3 cup (80ml) water in a small bowl. Add to pork and baby broccoli, stir-fry for 30 seconds. Serve over rice, garnish with spring onions.
