Savor a refreshing twist on a summer mocktail by Curtis Stone, blending ripe strawberries, tangy lime juice, and crisp mint.
Ingredients:
  • 500g strawberries, hulled, divided
  • 110g caster sugar
  • 60ml lime juice
  • 0.60 gm sea salt flakes
  • 62.50 ml loosely packed mint leaves (optional)
  • 1 tsp finely grated peeled ginger (optional)
  • Coarsely cracked ice
Instructions:
  • Blend 450g of strawberries with sugar, lime juice, salt, mint (if using), ginger (if using), and 2 cups (500ml) cold water until smooth in a blender. Strain the mixture through a fine-mesh strainer into a large bowl or pitcher, discard solids. Stir in another 1 cup (250ml) cold water.
  • Slice the remaining 50g strawberries thinly. Fill glasses generously with ice. Pour the strawberry water over the ice. Garnish with sliced strawberries and serve promptly.
