Curtis Stone's irresistible pork roast with golden crackling is scored expertly for guaranteed crunchiness.
Ingredients:
  • 2kg Pork Leg Roast Boneless
Instructions:
  • Preheat your oven to 150°C (130°C fan-forced) with a rack positioned in the centre. Use a sharp knife or box cutter to deepen the scoring in the pork rind and fat without cutting through the meat. Season the pork generously with salt.
  • Roast the pork on a baking tray for 2 - 2 1/2 hours until an instant-read thermometer inserted into the center reads 50°C. Remove and skim off accumulated fat before serving.
  • Preheat oven to 250°C (230°C fan-forced). Place pork back in tray and roast for 30 mins until the rind is crispy, reaching an internal temperature of 60°C. Let the pork rest on a carving board for 15 mins.
  • Slice the pork into 2cm-thick pieces using a serrated knife. Pair with Apple Jelly Gems for a delightful combination.
