Impressive Christmas roast turkey by Curtis Stone, served with flavorful gravy made from pan drippings.
Ingredients:
  • 4.2kg Medium RSPCA Approved Australian Whole Turkey
  • 2 carrots, peeled, coarsely chopped
  • 2 brown onions, coarsely chopped
  • 3 celery sticks, coarsely chopped
  • 100g butter
  • 12.20 gm Worcestershire sauce Gravy
  • 750ml chicken stock
  • 60g butter
  • 50g plain flour
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Pat the turkey dry, fill the cavity with half of the carrots, onions, and celery, and tie the legs with kitchen string. Spread the remaining vegetables in a roasting pan, place the turkey on a rack in the pan, and get ready for a delicious feast.
  • In a small saucepan, gently melt butter and Worcestershire sauce together, then remove from heat. Brush the turkey all over with the butter mixture and cover with foil. Roast for 1 1/4 hours. Uncover, baste with more butter mixture, and continue roasting while basting every 20 minutes until the turkey reaches 75°C when an instant-read thermometer is inserted into the thickest part of the breast. This should take around 1 1/4 to 1 1/2 hours.
  • Place the turkey on a carving board to rest for 20 minutes without cleaning out the roasting pan.
  • Prepare the gravy by delicately transferring the liquid from the roasting pan to a small measuring cup. Let it sit undisturbed for 5 minutes to let the fat separate from the juices. Skim off the fat and keep the flavorful pan juices.
  • Preheat roasting pan over medium-high heat. Mix in reserved pan juices and stock, bringing it to a simmer while stirring to loosen brown bits. Strain the mixture to discard solids.
  • In a medium heavy saucepan over medium-high heat, melt butter by swirling it around. Add flour and cook while stirring for 2 minutes. Whisk in the stock mixture and bring to a simmer. Let it simmer for about 5 minutes until the gravy thickens slightly. Season to taste.
  • Present the beautifully carved turkey with a side of rich, flavorful gravy.
