Custard tart truffles recipe

Custard tart truffle balls - a delightful twist on truffles with childhood tea flavor and only 5 ingredients. Perfect as Christmas gifts in cute packaging. Requires 2.5 hours of chilling.
Ingredients:
  • 100g digestive biscuits
  • 2 x 130g custard tarts (see note)
  • 85g (1 cup) desiccated coconut
  • 250g white chocolate, chopped
  • 0.63 gm ground nutmeg, plus extra to serve
Instructions:
  • In a medium bowl, crumble biscuits by hand until coarse crumbs form.
  • In a medium bowl, crumble custard tarts by hand into coarse pieces. Add biscuit crumbs and 1/3 cup coconut. Mix with your hands until thoroughly combined.
  • Form mixture into 2cm balls and set on a baking paper-lined tray. Chill in the refrigerator for 30 minutes until firm.
  • In a microwave-safe bowl, heat the chocolate on MEDIUM power, stirring with a metal spoon every minute, until fully melted and smooth, for about 2-3 minutes.
  • Dip balls into melted chocolate using a fork, letting excess chocolate drip off. Coat in remaining coconut, sprinkle with nutmeg, and return to the tray. Refrigerate for 2 hours until set and chilled. Serve garnished with extra nutmeg, if desired.
