Delicious pecan shortbread bar cookies with cardamom spice and jam filling, ideal for pairing with coffee or tea.
Ingredients:
1cupbutter
1cupwhite sugar
2egg yolks
0.125 teaspoonground cardamom
0.25 teaspoonground allspice
2cups all-purpose flour
1cupchoppedpecans
0.5 cupstrawberry jam
Instructions:
Preheat your oven to a cozy 325 degrees F (165 degrees C) while you generously grease an 8-inch square baking dish.
In a mixing bowl, whip the butter until creamy and light. Gradually incorporate the white sugar until fluffy. Mix in the egg yolks until well combined.
Combine the cardamom, allspice, and flour by sifting them together. Gradually mix this with the butter mixture until well combined. Fold in the chopped pecans.
Spread half of the dough evenly into the prepared pan. Then, add strawberry jam on top before covering it with the remaining dough.
Bake at 325 degrees F (165 degrees C) for 1 hour until lightly browned. Allow to cool before cutting into 1 1/2 inch squares.
