Delicious pecan shortbread bar cookies with cardamom spice and jam filling, ideal for pairing with coffee or tea.
Ingredients:
  • 1 cup butter
  • 1 cup white sugar
  • 2 egg yolks
  • 0.125 teaspoon ground cardamom
  • 0.25 teaspoon ground allspice
  • 2 cups all-purpose flour
  • 1 cup chopped pecans
  • 0.5 cup strawberry jam
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C) while you generously grease an 8-inch square baking dish.
  • In a mixing bowl, whip the butter until creamy and light. Gradually incorporate the white sugar until fluffy. Mix in the egg yolks until well combined.
  • Combine the cardamom, allspice, and flour by sifting them together. Gradually mix this with the butter mixture until well combined. Fold in the chopped pecans.
  • Spread half of the dough evenly into the prepared pan. Then, add strawberry jam on top before covering it with the remaining dough.
  • Bake at 325 degrees F (165 degrees C) for 1 hour until lightly browned. Allow to cool before cutting into 1 1/2 inch squares.
