Enhance the classic banana bread with ripe bananas for natural sweetness and customize with your favorite nuts for a personalized breakfast delight.
Ingredients:
  • 0.5 cup butter, softened
  • 2 very ripe bananas, mashed
  • 1 cup self-rising flour
  • 0.25 cup flax seed meal
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C) while you prepare a 9x5-inch loaf pan or line a muffin pan with cupcake liners.
  • Use an electric mixer to beat the butter and sugar in a mixing bowl until it becomes light and fluffy.
  • Add the eggs one at a time, then incorporate the bananas.
  • Combine the self-rising flour and flax seed meal until just mixed; gently incorporate the walnuts by folding them in.
  • Gently transfer the batter into the pan that has been lined or greased.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, around 20 minutes for muffins or 1 hour for a loaf. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
