Create succulent oven-roasted pork by searing and cooking it directly from the fridge for a perfect balance of flavor and juiciness.
Ingredients:
  • 1 teaspoon kosher salt
  • 1 (3 pound) boneless top loin pork roast
Instructions:
  • Mix together the oil, pepper, and salt until well combined. Massage the flavorful oil mixture onto the pork and let it chill in the fridge as you preheat the oven.
  • Preheat your oven to a piping hot 475 degrees F (245 degrees C).
  • Set the pork on a roasting rack in a large pan and roast in the preheated oven for 30 minutes.
  • Take out the pork from the oven, lower the temperature to 325°F (165°C), and use an instant-read thermometer to check the temperature in the thickest part of the center, which should read between 80-110°F (27-43°C).
  • Let the pork sit uncovered at room temperature until it reaches an internal temperature of 115-140 degrees F (46-60 degrees C), approximately 30 minutes.
  • Place the dish back in the oven and cook until the internal temperature reaches 145 degrees F (63 degrees C), which should take another 15 to 30 minutes.
  • Allow the roast to rest at room temperature for 15 to 20 minutes before slicing and serving to enhance its flavors.
