Bacon-wrapped Cheddar meatloaf - a guaranteed hit!
Ingredients:
  • 2 pounds ground beef
  • 2 tablespoons ketchup
  • 1 cup dry bread crumbs
  • 1 tablespoon Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 1 small yellow onion, diced
  • 6 slices bacon
  • 8 ounces sharp Cheddar cheese, cut into quarters
  • 1 tablespoon ketchup
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • In a large bowl, mix ground beef, eggs, and 2 tablespoons of ketchup until combined. Add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line a 9x13 inch pan with bacon. Spread half of the meat mixture on the bacon, top with 3 pieces of Cheddar cheese, then cover with the remaining meat mixture and shape into a loaf. Wrap the bacon around the loaf and spread 1 tablespoon of ketchup on top.
  • Roast in the preheated oven until fully cooked through, approximately 60 minutes. Verify doneness by ensuring the center reaches at least 160°F (70°C) with an instant-read thermometer. Take out of the oven.
  • Slice the remaining Cheddar cheese and layer it on top of the meat loaf. Bake until the cheese melts, around 5 minutes. Let the meat loaf rest for another 5 minutes before serving.
