Spicy jalapeno and pepperjack cheese meatloaf with cornbread crumbs for a flavorful twist. Customize to your liking for a delicious and moist homestyle dish.
Ingredients:
  • 1.5 pounds ground beef
  • 0.5 pound ground pork
  • 0.75 cup canned whole kernel corn
  • 0.5 cup crumbled cornbread
  • 0.5 cup sour cream
  • 0.5 cup shredded pepperjack cheese
  • 0.5 cup finely chopped onion
  • 0.25 cup milk
  • 1 egg, lightly beaten
  • 3 fresh jalapeno peppers, seeded and minced
  • 2 cloves garlic, minced
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C) and lightly grease a medium baking dish.
  • Combine ground beef and ground pork in a large bowl. In another bowl, mix corn, cornbread, sour cream, pepperjack cheese, onion, milk, egg, jalapeno peppers, garlic, kosher salt, and pepper. Gently fold the corn mixture into the meat mixture. Shape into a loaf, then transfer to the baking dish.
  • Bake for 1 hour in a preheated oven until the internal temperature reaches 160°F (72°C). If the loaf is too brown, cover loosely with foil for the last 15 minutes of baking.
