Classic icebox pie with zesty lemon filling and fluffy meringue on a vanilla wafer crust, a beloved family recipe for generations.
Ingredients:
  • 1 (12 ounce) box vanilla wafer cookies
  • 2 tablespoons margarine, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs, separated, divided
  • 4 tablespoons white sugar
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect bake.
  • Crush 28 wafer cookies using a food processor or by hand. Press the crushed cookies and melted margarine onto the bottom of a 9-inch pie pan. Arrange the remaining whole wafer cookies around the edge of the pan.
  • Zest a tablespoon from fresh lemons and save for later. Squeeze half a cup of lemon juice. Mix the lemon juice, zest, sweetened condensed milk, and egg yolks in a bowl until well combined. Pour the mixture into the prepared crust.
  • After 15 minutes in the preheated oven, take it out. Keep the oven on.
  • In a glass bowl, whip egg whites on high speed, gradually adding sugar, until nearly stiff peaks form. Spread the meringue on the pie with a spatula, making sure it touches the wafer cookies.
  • Place in the preheated oven until golden brown, approximately 15 minutes, checking regularly. Allow to cool completely for 20 to 30 minutes. Refrigerate for a minimum of 4 hours before serving.
