Try this killer recipe for aunt-approved peanut butter cookies using shortening.
Ingredients:
  • 0.5 cup shortening
  • 0.5 cup crunchy peanut butter
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 1.25 cups all-purpose flour, plus more as needed
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
Instructions:
  • In a large bowl, use an electric mixer to cream together shortening, peanut butter, and both sugars until light and fluffy. Add the egg and beat until fully incorporated. In a separate bowl, mix flour, baking soda, baking powder, and salt, then gradually stir into the peanut butter mixture until well combined. Cover the dough and refrigerate for at least 1 hour before using.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Shape the chilled dough into walnut-sized balls and arrange them 2 inches apart on baking sheets. Flatten the dough balls with a floured fork to create a crosswise pattern.
  • Place the cookies in the preheated oven until the edges are firm, for about 10 to 12 minutes. Then, move the cookies to a wire rack to cool completely.
