Hearty lima bean soup with vegetables and ham bone for a flavorful and budget-friendly meal.
Ingredients:
  • 1 ham bone with some meat
  • 8 cups water, plus more as needed
  • 1 (16 ounce) package dried lima beans
  • 4 stalks celery, diced
  • 1 onion, diced
  • 0.5 pound diced cooked ham
  • 4 carrots, peeled and sliced
  • 1 teaspoon dried parsley
Instructions:
  • In a large saucepan, simmer the ham bone in 8 cups of water over medium-low heat for about 2 hours, until the meat falls off the bone. Remove and discard the bone, then transfer the meat to a bowl using a slotted spoon.
  • Place the lima beans in a large pot and cover them with cold water. Bring to a boil, then remove from heat, cover, and let stand for 1 hour. Drain and rinse the beans.
  • In a skillet over medium heat, sauté celery and onion until onion turns translucent, for 5 to 7 minutes. Stir in cooked ham bone, lima beans, and diced ham. Simmer on low heat, adding water as needed, until soup thickens to your liking, approximately 90 minutes.
  • Add carrots, salt, pepper, and parsley to the soup and simmer for an additional 30 minutes until the carrots are tender.
