Homemade pad thai sauce: sweet brown sugar, savory fish sauce, zesty lime juice. Elevate your noodles to restaurant-level perfection!
Ingredients:
  • 0.75 pound bean sprouts
  • 6 ounces pad thai rice noodles
  • 4 eggs
  • salt
  • 3 tablespoons lime juice
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 0.25 cup fish sauce
  • 3 tablespoons peanut oil
  • 1 tablespoon minced garlic
  • 1.5 teaspoons red pepper flakes
  • 2 cups grated carrots
  • 0.66666668653488 cup chopped peanuts
  • 1 cup green onions cut into 1-inch pieces
Instructions:
  • - Boil a pot of water. Quickly blanch bean sprouts for about 30 seconds, then remove and drain well. Once the water boils again, add rice noodles and cook until al dente, 3 to 5 minutes. Drain and rinse with cold water.
  • In a small bowl, beat eggs and sprinkle with a pinch of salt. In another bowl, mix lime juice, ketchup, brown sugar, and fish sauce.
  • In a wok or large skillet over medium-high heat, sizzle garlic in oil. Toss in pepper flakes and carrots; stir-fry for 1 minute. Transfer mixture out of the wok. Pour beaten eggs into the wok and softly scramble. Once eggs are cooked, combine in the wok with carrots, sauce, bean sprouts, noodles, peanuts, and green onions; mix well.
