Dad's comforting favorite for a chilly day: A must-try hearty dish, perfect for cold weather. Top with oyster crackers for the perfect finish.
Ingredients:
  • 1 tablespoon butter
  • 1 small onion, diced
  • 3 pounds chicken drumsticks
  • 0.25 cup uncooked barley
  • 0.25 cup uncooked elbow macaroni
  • 1 (20 ounce) package frozen cauliflower and broccoli
  • 1 (10 ounce) package frozen corn
  • 2 (28 ounce) cans whole peeled tomatoes
  • 2 (28 ounce) cans tomato sauce
Instructions:
  • In a large pot over medium heat, melt the butter until fragrant. Add the onion and cook until caramelized. Add the chicken to the pot and pour enough water to cover it. Bring to a boil and simmer for 45 minutes until the chicken is tender and easily falls off the bone.
  • Take out the chicken legs from the stock, remove the bones, skim the stock, and put the meat back in the pot.
  • Combine the barley and macaroni in the pot, then add the cauliflower, broccoli, corn, tomatoes, and tomato sauce. Cook and stir occasionally for 30 minutes or until the barley is cooked.
