Tender marinated pork shoulder seasoned with garlic, olive oil, and vinegar for a flavorful Puerto Rican pernil dish.
Ingredients:
  • 10 cloves garlic, or more to taste
  • 0.25 cup olive oil
  • 3 tablespoons white vinegar
  • 2 tablespoons dried oregano
  • 1 tablespoon salt
  • 1.5 teaspoons ground black pepper
  • 5 pounds pork shoulder, trimmed of excess fat
Instructions:
  • Prepare all ingredients.
  • In a mortar and pestle, create a flavorful paste by blending garlic, olive oil, vinegar, oregano, salt, and black pepper together.
  • Make deep slits in the pork using a small knife. Fill the slits with garlic paste and rub any extra paste all over the pork.
  • Place the pork in a convenient plastic roasting bag and position it inside a roasting pan with a rack. Allow the flavors to meld by marinating in the refrigerator for 8 to 48 hours.
  • Remove the pork from the refrigerator, allow it to come to room temperature, uncovered, for 1 to 2 hours.
  • Preheat the oven to 300°F (150°C) for the perfect bake.
  • Place the pork in the oven skin-side down and roast until it turns a beautiful golden-brown, approximately 2 hours.
  • Continue roasting the pork with the skin-side up until the juices run clear and the internal temperature reaches at least 145 degrees F (63 degrees C, 2 to 4 hours more.
