Creamy coconut rice pudding with versatile topping options. Delicious dairy-free dessert.
Ingredients:
  • 4 cups canned coconut milk, shaken
  • 0.25 cup cane sugar
  • 1 teaspoon vanilla extract
  • 1 cup long grain white rice
Instructions:
  • In a medium pot, mix together coconut milk, sugar, and vanilla extract. Stir well. Add rice and bring to a gentle boil over medium heat for about 5 minutes. Cook and stir occasionally until the rice has softened and the mixture is slightly soupy but not too runny, approximately 20 minutes.
  • Transfer the mixture into individual serving dishes, then either serve immediately while warm or refrigerate to chill before serving.
