Dakos Salad

Experience the flavors of summer with Dakos Salad: a Greek dish combining tomatoes, feta, capers, onion, oregano, and basil for a burst of freshness in every bite.
Ingredients:
1poundripe tomatoes, cut into 11/2-inch chunks
2tablespoons finely dicedred onions
1/4 cupblack olives (such as kalamata), pitted and roughly chopped
1tablespooncapers, roughly chopped
Small handfulparsley leaves, chopped
Small handfulbasil leaves, chopped
1teaspoondried oregano
2tablespoons red wine vinegar
4tablespoons olive oil, plus extra for drizzling
1/3 teaspoonsalt, plus more to taste
Black pepper, to taste
6dakos rusks or two thick slices of sourdough cut into chunks and toasted
1/2 cupfeta, crumbled
Instructions:
In a large bowl, mix together the tomatoes, red onion, olives, capers, parsley, basil, oregano, red wine vinegar, olive oil, salt, and black pepper to your liking.
Break the rusks into 1-inch pieces and sprinkle them over the salad. Gently mix everything together with a rubber spatula and allow the salad to rest for 10 minutes to let the rusks absorb the tomato juices and soften.
Sprinkle feta over the salad after 10 minutes of resting.
Taste salad and adjust seasoning with extra salt and pepper if necessary. Drizzle with a final touch of olive oil. Serve.
