Savor the deliciousness of grilled vegetable mayo, perfect for sandwiches, fries, and grilled meats.
Ingredients:
  • 2 large Roma (plum) tomatoes, halved
  • 1 large green bell pepper, halved and seeded
  • 1 white onion, halved
  • 1 head garlic, halved crosswise
  • 2 tablespoons olive oil, or as needed
  • 0.25 teaspoon garlic powder, or to taste
  • sea salt to taste
  • 1.5 cups mayonnaise
  • 1 teaspoon ground dried chipotle pepper
Instructions:
  • Prepare your outdoor grill by preheating it to high heat and lightly oiling the grate.
  • Massage halves of tomato, bell pepper, onion, and garlic with olive oil, then sprinkle with garlic powder, sea salt, and black pepper for a flavorful start.
  • Grill vegetables until they are charred and wrinkled, turning occasionally, for 5 to 10 minutes.
  • Combine grilled vegetables, mayonnaise, and dried chipotle pepper in a blender bowl and blend to a smooth consistency.
