Flaky salmon with zesty lemon, tangy capers, and sweet pineapple for a refreshing spring or summer dish.
Ingredients:
  • 1 (1 pound) fillet salmon
  • 1 (6 ounce) can pineapple chunks with juice
  • 1 cup chopped kale
  • 0.5 onion, sliced
  • 1 tablespoon capers
  • 1 tablespoon olive oil
  • lemon, juiced
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Place the salmon fillet in a baking dish. Top it with pineapple, kale, onions, and capers, then drizzle olive oil and lemon juice on top. Season with salt and pepper before covering the dish with foil.
  • Cook the salmon in the preheated oven for approximately 25 minutes or until it easily flakes with a fork.
