Spicy jalapeño and bell pepper wrapped beef hot dogs in crispy bacon in 15 minutes.
Ingredients:
  • 4 beef hot dogs
  • 2 teaspoons olive oil
  • 1/2 small onion, sliced (1/4 cup)
  • 1/2 red bell pepper, cut into strips
  • 1/2 green bell pepper, cut into strips
  • 4 slices uncooked bacon
  • 4 flour tortillas (6 inch)
  • 1/4 cup pickled sliced jalapeño chiles, drained
Instructions:
  • Preheat the broiler in the oven.
  • Prepare the cookie sheet with cooking spray. Arrange the hot dogs on the sheet. Broil them 4 to 6 inches away from the heat source for 4 to 5 minutes, or until heated through. Set aside and keep warm.
  • Preheat the oven to 350°F. In a large skillet, heat oil over medium-high heat until hot. Sauté the onion and bell peppers for 4 to 6 minutes, stirring frequently, until slightly softened and browned. Transfer to a plate and keep warm.
  • Cook the bacon in the same skillet for 4 to 6 minutes until it is browned but still slightly limp.
  • Place 1 hot dog on each tortilla and top with one-fourth of the onion-pepper mixture. Set aside 4 jalapeño slices, then divide the remaining jalapeño slices among tortillas. Wrap each tortilla around the filling, followed by a bacon slice, securing with a toothpick and garnishing with 1 jalapeño slice. Transfer to an ungreased cookie sheet.
  • Bake at 350°F for 5-8 minutes until the bacon is crispy and the filling is heated through.
