Danielle's Fattoush Salad

Crisp pita bread, fresh veggies, tangy feta cheese, mint, and zesty lemon dressing make a delicious fattoush salad.
Ingredients:
2tablespoons grapeseed oil
2pita bread rounds, cut into 1-inch pieces
2cups shreddedromaine lettuce
1green bell pepper, cut into bite-size pieces
1 large roma tomato, cut into bite-size pieces
0.5red onion, sliced
0.5English cucumber, cut into bite-size pieces
0.25 cupchoppedfeta cheese
2tablespoons choppedfresh mint
1tablespoonchoppedfresh flat-leaf parsley
0.25 cupextra-virgin olive oil, or more to taste
1lemon, juiced, or more to taste
1clovegarlic, grated
0.5 teaspoonGreek seasoning
0.5 teaspoonground sumac
salt and ground black pepper to taste
Instructions:
In a large skillet over medium-low heat, gently fry pita bread pieces in grapeseed oil until they turn golden brown, about 2 to 3 minutes. Then, place the bread pieces on a paper towel-lined plate.
Combine the romaine lettuce, tomato, red onion, cucumber, feta cheese, mint, and parsley in a large bowl and gently mix.
Combine olive oil, lemon juice, garlic, Greek seasoning, sumac, salt, and black pepper in a bowl. Mix until fully blended. Drizzle the olive oil mixture and pita bread pieces over the lettuce mixture. Toss everything together until well coated.
