Crisp pita bread, fresh veggies, tangy feta cheese, mint, and zesty lemon dressing make a delicious fattoush salad.
Ingredients:
  • 2 tablespoons grapeseed oil
  • 2 pita bread rounds, cut into 1-inch pieces
  • 2 cups shredded romaine lettuce
  • 1 green bell pepper, cut into bite-size pieces
  • 1 large roma tomato, cut into bite-size pieces
  • 0.5 red onion, sliced
  • 0.5 English cucumber, cut into bite-size pieces
  • 0.25 cup chopped feta cheese
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 0.25 cup extra-virgin olive oil, or more to taste
  • 1 lemon, juiced, or more to taste
  • 1 clove garlic, grated
  • 0.5 teaspoon Greek seasoning
  • 0.5 teaspoon ground sumac
  • salt and ground black pepper to taste
Instructions:
  • In a large skillet over medium-low heat, gently fry pita bread pieces in grapeseed oil until they turn golden brown, about 2 to 3 minutes. Then, place the bread pieces on a paper towel-lined plate.
  • Combine the romaine lettuce, tomato, red onion, cucumber, feta cheese, mint, and parsley in a large bowl and gently mix.
  • Combine olive oil, lemon juice, garlic, Greek seasoning, sumac, salt, and black pepper in a bowl. Mix until fully blended. Drizzle the olive oil mixture and pita bread pieces over the lettuce mixture. Toss everything together until well coated.
