Authentic southern Italian dish featuring stretched pasta with crispy breadcrumbs and unique dried Senise peppers from Basilicata. Simply toast, chop, and scatter peppers for a special touch. Delightful to savor.
Ingredients:
  • 400 g durum wheat flour plus extra for dusting
  • 1 kg ripe tomatoes
  • 6 cloves of garlic
  • 2 peperoni cruschi (dried Senise peppers)
  • 100 g quality breadcrumbs
Instructions:
  • In a large bowl, combine flour and 200ml tepid water to form a smooth dough. Knead for 10 minutes until pliable. Rest for 30 minutes. Divide into quarters, roll into snakes, cut into 1-inch pieces and shape into mini sausages. Create indentations on each piece. Blanch tomatoes for 45 seconds, peel, chop and cook with garlic and olive oil for 45 minutes. Season. For pangrattato, cook peppers in olive oil, chop, fry with garlic and breadcrumbs until golden. Cook pasta until al dente, toss with sauce, water, and olive oil. Serve topped with pangrattato and a salad dressed with balsamic vinegar.
