Impress your date or guests with quick and flavorful blackened salmon pasta in just 30 minutes.
Ingredients:
  • nonstick cooking spray
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon granulated onion
  • 0.5 teaspoon granulated garlic
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon seafood seasoning (such as Old Bay®)
  • 2 (6 ounce) salmon fillets
  • 1 (8 ounce) package spaghetti
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 0.5 cup panko bread crumbs
  • 2 cups baby spinach
  • 2 tablespoons butter
  • 1 pinch red pepper flakes
  • 2 tablespoons freshly grated Parmesan cheese, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and line a baking sheet with foil, then spray it with nonstick spray.
  • In a small bowl, mix paprika, cumin, salt, onion, garlic, pepper, and seafood seasoning together. Remember to reserve 1 teaspoon of the seasoning for the pasta sauce.
  • Massage the remaining seasoning onto the salmon fillets and place them on the prepared baking sheet.
  • Cook the salmon in the preheated oven for 20 to 25 minutes, until it flakes easily with a fork.
  • While waiting, start a sizable pot of lightly salted water and bring it to a boil. Cook the spaghetti in the boiling water, stirring occasionally, until it is al dente, approximately 12 minutes.
  • In a skillet, heat olive oil over medium heat until it shimmers. Add garlic and saute until golden, approximately 30 seconds. Stir in panko and 1 teaspoon of reserved seasoning. Toast lightly, stirring constantly to avoid burning, for about 30 seconds. Transfer the toasted panko to a small bowl and remove from heat.
  • Place the spinach in a colander in the sink. Drain the spaghetti over the spinach to wilt it with the hot water. Transfer the drained pasta and spinach to the skillet, then add butter and red pepper flakes and toss to coat.
  • Divide noodles evenly into 2 bowls, then generously top each with a flavorful salmon fillet, crispy panko breadcrumbs, and savory Parmesan cheese. Serve right away for the best experience.
