Slow-cooked black-eyed peas with bacon, onion, and ham, served with cornbread for a hearty meal.
Ingredients:
  • 2 pounds dried black-eyed peas
  • 12 cups water
  • 8 cubes chicken bouillon
  • 1 pound bacon
  • 0.5 cup butter
  • 2 large yellow onions, chopped
  • 1 pound cooked ham, cut into bite-size pieces
  • salt and black pepper to taste
Instructions:
  • Assemble all ingredients.
  • Rinse and inspect peas, then soak in a large bowl filled with cool water for 8 hours to overnight. Drain and rinse before using.
  • In a large saucepan or stockpot, pour water and add bouillon cubes. Bring the mixture to a boil, occasionally stirring to dissolve the bouillon. Then, stir in peas, reduce the heat, and simmer.
  • Fry bacon in a large skillet over medium-high heat until crisp and browned all over, for about 10 minutes. Place on paper towels to drain, then crumble and set aside.
  • Combine butter and bacon grease in a pan and sauté onions until slightly caramelized, approximately 10 minutes.
  • Combine onions and cooking fat with peas, then mix in crumbled bacon, ham, salt, and pepper to taste. Simmer gently over low heat for 8 hours, stirring hourly.
