Savory bean and turkey dip, perfect for football season!
Ingredients:
  • 1 pound ground turkey
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (28 ounce) can vegetarian baked beans
  • 1 (16 ounce) can vegetarian refried beans
  • 1 tablespoon coconut oil
  • 1 cup salsa
  • 0.5 cup taco seasoning mix
  • 2 tablespoons ranch dressing
  • 2 teaspoons soy sauce
  • 2 teaspoons liquid smoke flavoring
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • salt and ground black pepper to taste
Instructions:
  • Begin by heating a large skillet over medium-high heat. Cook and stir the ground turkey in the hot skillet until it is browned and crumbly, which should take about 5 to 7 minutes. Next, add the onion and bell pepper. Cover the skillet and let it simmer until the onion is softened, which usually takes about 5 more minutes. Finally, transfer the flavorful turkey mixture to a bowl.
  • Combine baked beans, refried beans, and coconut oil in the skillet with the turkey mixture. Cook over medium heat, stirring occasionally, until beans are warmed through, about 5-7 minutes. Stir in salsa, taco seasoning, ranch dressing, soy sauce, and liquid smoke. Top with Cheddar and mozzarella cheese. Cover and cook until the cheese is melted, about 3-5 minutes.
  • Combine the bean mixture with the ground turkey, mixing thoroughly, then season generously with salt and pepper.
