Delicious cake mix cookies filled with coconut cream cheese icing and topped with chopped pecans.
Ingredients:
  • 1 (18.25 ounce) box red velvet cake mix
  • 2 eggs, lightly beaten
  • 0.5 cup vegetable oil
  • 1 tablespoon bourbon
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup butter, softened
  • 2 teaspoons evaporated milk
  • 0.5 cup flaked coconut
  • 4 cups confectioners' sugar
  • 0.5 cup chopped pecans
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • Combine the cake mix, eggs, oil, and bourbon in a large bowl until well combined. Roll the dough into walnut-sized balls and place them 2 inches apart on ungreased baking sheets.
  • Place in the oven that is already heated until the tops crack slightly, approximately 8 minutes. Allow them to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • Combine cream cheese, butter, evaporated milk, vanilla, and coconut in a large bowl, mixing well. Gradually add confectioners' sugar 1 cup at a time, ensuring thorough mixing after each addition. Adjust consistency by adding more milk if needed.
  • In a bowl, place the chopped pecans. Spread a generous layer of icing on the bottom of a cookie, then sandwich it with another cookie, pressing firmly to spread the icing to the edges. Roll the sandwiched cookies in the chopped pecans and repeat with the remaining cookies.
