Sautéed kale and spinach with onions, garlic, and toasted cashews - perfect pairing for fish or chicken.
Ingredients:
  • 0.5 cup salted cashews
  • 3 tablespoons olive oil, divided
  • 1 onion, minced
  • 5 large garlic cloves
  • 1 bunch kale, stems removed
  • 1 bunch fresh spinach, stems removed
  • sea salt to taste
  • white pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix cashews with 1 tablespoon of olive oil until coated. Spread evenly on a baking sheet.
  • Toast the cashews in the preheated oven, shaking the baking sheet occasionally, until golden brown and fragrant, for 5 to 10 minutes. Be mindful not to burn them. Set aside.
  • In a skillet, heat 2 tablespoons of olive oil. Sauté the onion until soft, about 5 minutes. Add garlic and cook for 1 minute. Mix in kale, cover, and cook until soft, about 7 minutes. Stir in spinach, season with sea salt and white pepper, and cook until wilted, about 3 minutes. Serve with tossed cashews.
