Crispy General Tso's chicken coated in a flavorful spicy-sweet sauce with hints of ginger and garlic.
Ingredients:
  • 4 cups vegetable oil for frying
  • 3 large eggs
  • 0.5 cup cornstarch
  • 2 teaspoons cornstarch
  • 2 pounds skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1.5 cups white sugar
  • 0.25 cup distilled white vinegar
  • 0.25 cup rice vinegar
  • 0.25 cup dry sherry
  • 2.5 tablespoons soy sauce
  • 2 teaspoons minced garlic
  • 2 tablespoons vegetable oil
  • 12 whole dried red chile peppers, or to taste
  • 2 tablespoons minced fresh ginger, or to taste
Instructions:
  • Fry the chicken: Heat oil in a deep fryer or large saucepan until it reaches 375 degrees F (190 degrees C).
  • In a large bowl, whisk eggs until smooth. Add 1/2 cup plus 2 teaspoons of cornstarch, and mix until no lumps are left. Toss in chicken pieces until well coated.
  • Fry the battered chicken pieces individually in hot oil until they turn golden brown and start to float, approximately 3 minutes. Then, let them drain on a plate lined with paper towels.
  • Create a flavorful sauce by simmering sugar, vinegars, sherry, soy sauce, and garlic in a saucepan until the sugar dissolves and the sauce thickens to the texture of light pancake syrup, around 3 minutes. Keep warm off the heat.
  • In a wok or large skillet, heat oil over medium-high heat. Sauté chiles and ginger until ginger starts to brown, around 30 seconds. Remove chiles and ginger with a slotted spoon and mix into warm sauce until blended.
  • Achieve a deep golden crisp on the chicken in the wok. Serve with sauce.
