Decadent Passover chocolate brownies with a coffee kick and chocolate chips.
Ingredients:
  • 4 (1 ounce) squares unsweetened baking chocolate
  • 1 cup butter
  • 2 egg whites
  • 2 cups white sugar
  • 0.25 cup strong brewed coffee
  • 2 teaspoons kosher for Passover vanilla flavoring
  • 1 cup potato starch
  • 2 tablespoons potato starch
  • 0.25 cup matzo cake meal
  • 2 tablespoons matzo cake meal
  • 0.25 cup unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 6 ounces semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease 2 8x8-inch baking pans.
  • In a double boiler, melt unsweetened chocolate and butter over simmering water. Stir until well combined. In a mixing bowl, beat eggs and egg whites with an electric mixer on high speed until very fluffy, about 5 minutes. Gently fold in the butter-chocolate mixture, sugar, coffee, and vanilla until well combined.
  • Combine the potato starch, matzo cake meal, cocoa powder, and salt in a bowl. Use an electric mixer to beat the dry ingredients into the chocolate mixture until fluffy. Gently fold in the chocolate chips and divide the batter between the 2 prepared baking dishes.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the pan comes out with moist crumbs.
