Vibrant tomato salad with onions, cucumbers, and zesty vinaigrette, served over lettuce with hard-cooked egg and anchovy for a refreshing display of fresh flavors.
Ingredients:
  • 8 large tomatoes, cut into wedges
  • 2 red onions - cut into wedges and separated
  • 2 yellow onions - cut into wedges and separated
  • 2 cucumbers, peeled and diced
  • 1 cup olive oil
  • 0.25 cup red wine vinegar
  • 1 teaspoon white sugar
  • 1 tablespoon minced garlic
  • 2 teaspoons minced fresh oregano
  • salt and pepper to taste
  • 1 head romaine lettuce, torn into bite-size pieces
  • 2 hard-cooked eggs, sliced
  • 8 anchovy filets
Instructions:
  • Combine tomatoes, red onions, yellow onions, and cucumbers in a large bowl. Whisk together olive oil, vinegar, sugar, garlic, oregano, salt, and pepper to make the dressing. Pour the dressing over the tomato mixture and toss well to coat. Chill in the refrigerator overnight.
  • Place a bed of fresh lettuce on plates, then elegantly top with the flavorful marinated tomato salad. Finish with a delicate arrangement of egg slices and anchovies for added flair (optional).
