Nutritious whole-wheat health bread bursting with cracked wheat, sunflower seeds, and flax seeds for a rich, complex flavor.
Ingredients:
  • 2 tablespoons active dry yeast
  • 1 teaspoon white sugar
  • 0.5 cup warm water
  • 3.5 cups warm water
  • 0.25 cup honey
  • 0.25 cup molasses
  • 0.5 cup vegetable oil
  • 2 eggs
  • 2 tablespoons lemon juice
  • 7 cups whole wheat flour
  • 0.25 cup flax seed
  • 0.25 cup cracked wheat
  • 0.25 cup sunflower seeds
  • 4 teaspoons salt
  • 4 cups bread flour
Instructions:
  • First, dissolve yeast and sugar in 1/2 cup of warm water in a small bowl. Then, in a large bowl, mix the remaining 3 1/2 cups of warm water with honey, molasses, oil, eggs, and lemon juice until well combined. Finally, add the yeast mixture and stir until fully incorporated.
  • Gradually incorporate 5 cups of whole wheat flour into the mixture, beating thoroughly after each addition. Then, mix in flax, cracked wheat, and sunflower seeds until well combined.
  • Allow the mixture to rest for 20 minutes until it becomes very light. Then, incorporate the salt and remaining flours until the dough easily separates from the sides of the bowl.
  • Knead the dough for 10 to 15 minutes until it is smooth and elastic. Place it in a greased bowl, cover it, then allow it to rise in the oven with the light on until doubled in size, approximately 1 hour.
  • Gently deflate and form into 6 uniform round balls. Cover and allow to rest for 20 minutes.
  • Shape the dough into loaves and allow them to rise covered in a warm place until they double in size. Then, bake at 375 degrees F (190 degrees C) for 25-35 minutes until golden brown.
