Ingredients:
  • 2.5 pounds carrots, peeled and chopped
  • 2 potatoes, peeled and chopped
  • 1 large onion, chopped
  • 1 tablespoon herbes de Provence
  • 1 teaspoon ground black pepper
  • 6 cups vegetable broth
  • 1 cup light cream, or as needed
Instructions:
  • Preheat oven to 400°F (200°C) for a perfectly heated cooking environment.
  • Combine carrots, potatoes, onion, and garlic in a large roasting pan. Drizzle with oil and season with herbes de Provence, salt, and pepper.
  • Roast the vegetables in the preheated oven for about 50 minutes, until tender and beginning to brown, stirring once. Remove them from the oven and scrape into a large pot. Add vegetable broth, bring to a boil.
  • Using a stick blender, puree the soup until smooth, then add cream to achieve your preferred thickness.
