Creamy roasted squash soup: Pureed onions, stock, and squash blended with rich cream for a heavenly, smooth finish.
Ingredients:
  • 3 delicata squash, halved lengthwise and seeded
  • 1 onion, chopped
  • 3 cups vegetable broth
  • 1.5 cups heavy whipping cream
  • 2 tablespoons butter
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C. Arrange the squash halves cut side down in a baking dish, pour 1/8 inch of water into the dish, cover with foil, and bake for 35-40 minutes, or until the squash is tender. Allow it to cool before serving.
  • In a sizeable saucepan, melt the butter and sauté the onion over low heat until softened, making sure it doesn't brown.
