Homemade pumpkin scones - perfect for fall or Thanksgiving!
Ingredients:
  • 1.5 ounces unsalted butter, at room temperature
  • 3 ounces brown sugar
  • 1 egg, beaten
  • 1 cup mashed cooked pumpkin
  • 2 cups self-rising flour
  • 1 pinch salt
  • 1 tablespoon milk, or as needed
  • 2 tablespoons golden raisins, or to taste
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) while lightly flouring a baking sheet.
  • In a large bowl, cream together butter and brown sugar using an electric mixer until smooth and creamy. Mix in the egg until well combined, then add and incorporate the mashed pumpkin.
  • In a small bowl, mix together flour, baking powder, and salt. Then, add the mixture to the pumpkin and combine thoroughly until a dough forms.
  • Place the dough on a lightly floured surface and knead for 4 to 5 minutes until it is smooth and satiny. If the dough is too thick, add milk. Then, mix in the golden raisins and shape the dough into an 8-inch round that is about 1/2-inch thick.
  • Slice the round into 8 wedge-shaped pieces using a serrated knife. Place the wedges on the baking sheet, ensuring there is at least a 1/2-inch space between each piece.
  • Bake in a preheated oven until the tops are light brown and crusty, for 10 to 15 minutes. Then transfer to a wire rack and let cool for 20 minutes before serving.
