Elevate a classic favorite with a gourmet touch for a more exciting lunch experience.
Ingredients:
  • 80ml (1/3 cup) extra virgin olive oil
  • 1 small onion, finely chopped
  • 20.00 ml freshly chopped rosemary
  • 2 garlic cloves, crushed
  • 50g anchovies, chopped
  • 2 x 425g can 4-bean mix, drained
  • 425g can diced tomatoes, drained
  • 62.50 ml chopped flat-leaf parsley
  • 4 slices gluten-free bread, toasted
  • Grated parmesan, to serve
Instructions:
  • In a frypan, heat half of the oil over medium heat. Add onion and sauté for 1 minute. Stir in rosemary, garlic, and anchovies, and cook for another minute until flavors meld together beautifully.
  • Combine the beans and diced tomatoes, stir well, then reduce heat and simmer for 5 minutes, stirring occasionally to prevent sticking. Mix in half of the parsley.
  • Place the perfectly toasted bread on plates, heap with beans, and generously sprinkle with parmesan and the rest of the fresh parsley.
