Spicy dhal pairs perfectly with lamb or chicken.
Ingredients:
  • 200g (1 cup) dried split red lentils
  • 20.00 ml yellow mustard seeds
  • 1 tsp cumin seeds
  • 1 large brown onion, thinly sliced
  • 20.00 ml fresh ginger, finely chopped
  • 1 large garlic clove, finely chopped
  • 625ml (2 1/2 cups) water
  • 1 green jalapeno chilli, thinly sliced
  • Lemon wedges, to serve
  • Bought naan bread, warmed, to serve
Instructions:
  • Rinse the lentils under cold running water in a sieve until water runs clear, then set aside.
  • In a medium saucepan, gently warm the oil over low heat. Introduce the mustard seeds and cumin seeds, and sauté, stirring frequently, for 1 minute until fragrant.
  • Turn up the heat to medium and up the flavor by adding the onion, ginger, and garlic. Stir frequently for 3 minutes until the onion softens. Mix in the lentils and water, ensure they are well combined. Cover and simmer for 20 minutes until the mixture thickens nicely.
  • Garnish with chili, lemon wedges, and serve with naan bread.
