Di's Stuffed Green Peppers

Delicious weeknight meal: Bell peppers stuffed with beef, rice, and melty mozzarella.
Ingredients:
  • 6 green bell peppers, tops and seeds removed (reserve tops)
  • salt to taste
  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 1 (16 ounce) can tomatoes, chopped and liquid reserved
  • 0.5 cup long-grain white rice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 dash hot pepper sauce (such as Tabasco®)
  • 1 pinch ground black pepper
  • 1 cup shredded mozzarella cheese
  • 1 (8 ounce) can tomato sauce
Instructions:
  • Chop the green bell pepper tops and set aside 1/4 cup.
  • Boil a pot of water. Cook whole green bell peppers until slightly tender, about 5 minutes. Drain and lightly season the insides with salt. Set aside.
  • Preheat a large skillet over medium-high heat. Brown the beef with onion, 1/4 cup chopped green bell pepper, and garlic until cooked through, about 5-7 minutes. Drain any excess grease before continuing.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Combine canned tomatoes with their liquid, rice, water, Worcestershire sauce, 1 teaspoon of salt, hot sauce, and black pepper with the ground beef. Bring to a boil, then cover and simmer until rice is tender, about 15 to 18 minutes.
  • Combine 3/4 of the mozzarella cheese and 3/4 of the tomato sauce into the ground beef-rice mixture. Fill bell peppers with the mixture and top each with the remaining mozzarella cheese and tomato sauce. Place the stuffed peppers in a baking dish and cover with aluminum foil.
  • Bake in the hot oven until fully cooked and cheese is gooey, for 30 to 35 minutes.
