Satisfying end-of-week veggie feast.
Ingredients:
  • 5 eggs
  • 115.00 gm vegetable oil
  • 150.00 gm self-raising flour, sifted
  • 250.00 ml grated tasty cheese
  • 1 carrot, peeled, grated
  • 1 zucchini, trimmed, grated
  • 4 green onions, finely chopped
  • 150g butternut pumpkin, peeled, cut into 1cm cubes
  • 4 cup mushrooms, chopped
  • 62.50 ml flat-leaf parsley leaves, chopped
Instructions:
  • Preheat your oven to 190°C and generously grease a 20cm (base) square baking dish that's 4cm deep.
  • In a jug, beat together the eggs and oil. In a large bowl, mix the flour, cheese, carrot, zucchini, green onions, pumpkin, mushrooms, and parsley. Season with salt and pepper. Pour in the egg mixture and stir until combined.
  • Transfer the vegetable mixture into the dish, then level out the surface. Bake for 40-45 minutes until beautifully golden and firm. Allow it to rest for 10 minutes before slicing into squares. Enjoy it hot or cold.
