Classic Irish colcannon with creamy mashed potatoes, buttery cabbage, and flavorful bacon - a must-have for St. Patrick's Day!
Ingredients:
  • 2.5 pounds potatoes, peeled and cubed
  • 4 slices bacon
  • 0.5 small head cabbage, chopped
  • 1 large onion, chopped
  • 0.5 cup milk
  • salt and pepper to taste
  • 0.25 cup butter, melted
Instructions:
  • Prepare all ingredients.
  • In a saucepan, cover potatoes with water, bring to a boil, and cook until tender, about 15 to 20 minutes. Drain the potatoes.
  • While the potatoes are boiling, crisp the bacon in a large skillet over medium-high heat, turning occasionally, until perfectly browned, approximately 10 minutes. Place the bacon on paper towels to drain, crumble it, and set it aside. Keep the flavorful drippings in the skillet.
  • Cook cabbage and onion in the skillet with the drippings on medium heat until tender and translucent, about 10-15 minutes. Optionally cover the skillet to speed up the cooking process. Remove from heat when done.
  • Combine creamy mashed potatoes with a touch of milk in a spacious bowl; generously season with salt and pepper.
  • Incorporate the bacon, cabbage, and onion by gently folding them in.
  • Pour the mixture into a spacious serving bowl. Create a hollow in the middle of the potato mixture and drizzle with melted butter. Serve while still hot.
