Healthier, moist muffins with mango-peach applesauce for added flavor. Perfect for diabetics. Can swap whole wheat flour for white flour.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.75 cup granular sucrolose sweetener (such as Splenda®)
  • 1.25 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 egg whites
  • 1 cup mashed ripe banana
  • 0.25 cup applesauce
Instructions:
  • Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin by either greasing it or lining it with paper muffin liners.
  • Combine the flour, sugar substitute, baking powder, baking soda, and cinnamon in a large bowl. In another bowl, blend the egg whites, mashed banana, and applesauce. Gently mix the wet ingredients into the dry ingredients until just combined. Fill muffin cups 3/4 full with the batter.
  • Bake in the preheated oven for 15 to 18 minutes, or until the tops spring back when lightly touched. Cool muffins in the pan on a wire rack briefly before tapping them out.
