Delicious buttery lemon scallops with rice pilaf and veggies.
Ingredients:
20buttery round crackers, crushed
black pepper to taste
1teaspoongarlic powder
1poundsea scallops, rinsed and drained
0.5 cupbutter, melted
0.25 cupdry white wine
0.5lemon, juiced
1tablespoonchoppedfresh parsley, for garnish
Instructions:
Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease an 8x8 inch baking dish.
Mix together crushed crackers, black pepper, and garlic powder in a small bowl. Coat scallops with the mixture evenly and arrange them in the greased baking dish.
Combine melted butter, wine, and lemon juice in a separate bowl, then generously drizzle over the scallops.
Simply bake the scallops in a preheated oven until they are lightly browned, for about 15 minutes. Finish by garnishing them with freshly chopped parsley.
