Delicious buttery lemon scallops with rice pilaf and veggies.
Ingredients:
  • 20 buttery round crackers, crushed
  • black pepper to taste
  • 1 teaspoon garlic powder
  • 1 pound sea scallops, rinsed and drained
  • 0.5 cup butter, melted
  • 0.25 cup dry white wine
  • 0.5 lemon, juiced
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease an 8x8 inch baking dish.
  • Mix together crushed crackers, black pepper, and garlic powder in a small bowl. Coat scallops with the mixture evenly and arrange them in the greased baking dish.
  • Combine melted butter, wine, and lemon juice in a separate bowl, then generously drizzle over the scallops.
  • Simply bake the scallops in a preheated oven until they are lightly browned, for about 15 minutes. Finish by garnishing them with freshly chopped parsley.
