Ingredients:
1.5kg chicken thigh cutlets, skin removed
18.20 gm olive oil
20.00 gm butter
250g button mushrooms, sliced
4rashersrindless bacon, roughly chopped
420g can cream of mushroom soup
83.33 gm light thickened cream
40.00 ml lemon thyme leaves (optional)
Steamedwhite rice, to serve
Green beans, steamed, to serve
Instructions:
Preheat the oven to 200°C. Arrange the chicken in a single layer in an 8-cup ovenproof dish, then season with salt and pepper.
In a large frying pan over medium heat, heat oil and butter until sizzling. Add mushrooms and bacon; cook for 3 to 4 minutes, stirring occasionally, until tender. Mix in soup and cream until well combined. Bring mixture to a boil, then remove from heat. Finish by stirring in lemon thyme, if desired, before pouring over the chicken.
Bake without a cover for 30 minutes or until fully cooked. Serve alongside rice and beans.
