DJ's Outdoor Pork Loin with Veggies

Grilled citrus pork loin with mixed vegetables and apples in cast iron skillet.
Ingredients:
  • 2 tablespoons packed dark brown sugar
  • 2 teaspoons sea salt
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon rubbed sage
  • 1 (2 pound) pork loin
  • 0.5 cup olive oil
  • 4 red potatoes, quartered
  • 2 sweet potatoes, quartered
  • 5 carrots, cut into 1-inch chunks
  • 1 large onion, quartered
  • 2 tablespoons sea salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon chopped fresh cilantro
  • 3 large apples, cored and sliced
  • 3 cups fresh orange juice
  • 0.5 cup lemon juice
Instructions:
  • Combine brown sugar, 2 teaspoons sea salt, paprika, cumin, 1/2 teaspoon black pepper, cayenne pepper, garlic powder, and sage in a small bowl. Pat the pork loin dry with paper towels, then evenly rub the mixture onto the pork loin until fully coated.
  • Place the olive oil in a large resealable plastic bag. Add the seasoned loin to the bag, seal, and refrigerate for 24 hours, remembering to turn the bag once for even flavor.
  • In a large pot, combine red potatoes, sweet potatoes, carrots, onion, and cover with water. Season with 2 tablespoons of salt, 1 teaspoon pepper, and cilantro. Bring to a boil, then simmer gently for 25 minutes. Drain, but save some of the flavorful cooking water.
  • Heat up your outdoor grill on high heat and brush the grate lightly with oil.
  • Take the pork loin out of the bag and sear it on the preheated grill for 4 to 5 minutes on each side. Set aside and lower grill heat to medium.
  • Preheat a 12-inch cast-iron skillet on the grill. Layer apple slices at the bottom, then add orange juice and lemon juice. Nestle the pork loin on top of the apples and arrange drained vegetables around it. Fill the skillet with reserved water, leaving 1/2 inch of space from the top.
  • Grill the pork for 1 hour, basting with reserved water halfway through.
