DJ BBQ's scallops

Grilled scallops - simple, magical barbecue delight.
Ingredients:
  • 12 scallops trimmed, with the shells
  • 100 ml dry white wine
  • ½ a bunch of fresh flat-leaf parsley leaves picked
  • 2 tablespoons olive oil
  • 100 g salted butter
  • 3 cloves of garlic peeled
  • 1 fresh red chilli
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Spread hot coals in a flat, even layer at the base of your barbecue. Prepare the chilli garlic butter by melting oil and butter in a pan over medium heat. Finely chop garlic and chilli, keeping the seeds for heat, then add to the pan with black pepper. Stir well and set aside. Place scallops in shells on a platter, adding white wine to each. Using tongs, place shells on the coals, cover with the lid, and cook for 4 to 6 minutes, turning halfway. Transfer shells to a platter, drizzle 1 tablespoon of the butter over each scallop, sprinkle with parsley, and serve immediately. Optional: Ask your fishmonger to clean the scallops and provide shells.
