Generational perfection: Unbeatable easy meatloaf.
Ingredients:
  • 1 medium carrot peeled
  • 400 g beef mince
  • 400 g higher-welfare pork mince
  • 1 clove of garlic peeled and crushed
  • 1 teaspoon Old Bay seasoning or 2 fresh bay leaves, crushed
  • 2 teaspoon Worcestershire sauce
  • 100 g stale breadcrumbs
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 large free-range eggs
  • 150 g Cheddar cheese optional
  • 100 ml BBQ sauce
  • 50 ml tomato ketchup
  • Tabasco sauce
  • chili sauce
  • 1 large onion
  • 1 green pepper deseeded
Instructions:
  • Prepare your barbecue for the heat canyon technique by positioning the coals on opposite sides to create two heat walls. This setup will ensure even cooking with hot, direct heat on the sides and a cooler, indirect area in the middle. Place a drip tray in the middle and cover with the lid, allowing the barbecue to preheat to approximately 160°C/320°F. Combine BBQ sauce, ketchup, Tabasco, and chili sauce to make the sauce, then finely chop onion, pepper, and carrot. Mix them in a bowl with mince, garlic, bay leaves, Worcestershire sauce, breadcrumbs, salt, pepper, and beaten eggs. Add half of the cheese, mix well, shape into a loaf, and create diagonal indents on top. Pour over half of the sauce, then cook the meatloaf on the barbecue for 1 hour to 1 hour 15 minutes. Sprinkle the remaining cheese, continue cooking until melted, then let it rest for 10 minutes before slicing and serving with the remaining sauce. Enjoy your meal!
