Italian Christmas marzipan cookies; gluten-free and scrumptious.
Ingredients:
  • 5.25 cups ground almonds
  • 2.5 cups white sugar
  • 2 eggs
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 0.25 cup white sugar, or as needed
Instructions:
  • In a bowl, blend ground almonds, 2 1/2 cups sugar, eggs, lemon zest, and vanilla extract until a smooth dough forms.
  • Heat your oven to a toasty 400 degrees F (200 degrees C) and get your baking sheet ready by lining it with parchment paper.
  • Sprinkle 1/4 cup of sugar onto a shallow plate. Shape dough into walnut-size balls and coat them evenly with sugar. Arrange the balls 2 inches apart on the baking sheet.
  • Bake in the preheated oven for 10 to 15 minutes until lightly browned. Transfer carefully to a wire rack and allow to cool completely before serving.
